I Bake For One - Apple Pie

I can't be the only one who visited an apple orchard recently and picked far more apples than they could consume on their own. Five pounds to be exact.
In attempt to devour all the apples while at their prime, I set out to create a
scaled-down apple pie recipe that would fit perfectly into my Le Creuset bakeware. This recipe yielded one oatmeal crumb-topped pie that was as sizably appropriate as it was ascetically pleasing.
Not only is it fit for one, but it's also your daily serving of fruit! I'm fairly certain your dietician would not suggest supplementing your smoothie for this whole pie, but at least it's really not all too far from the standard slice.

Oatmeal Crumb Individual Apple Pie
Yield: One Individual Pie (roughly 6x4 inches, 2 inches deep)
Crust
3/4 Cup Flour
1/2 Cup Butter
1/4 Cup Water
Instructions:
1. Cut butter into small cubes while still cold, place in a small bowl with the flour
2. Using a dough cutter, a fork, or your own fingers, cut the butter into the flour until it is incorporated and the size of peas
3. Add in the water and stir slightly until just combined
4. Flour a small section of your countertop or workspace and knead the dough. Desired crust still has pea-sized chunks of butter visible, but is smooth and elastic in nature.
5. Wrap dough in plastic wrap and place in the refrigerator to keep cool
6. Once chilled, roll out and line the bottom of your greased baking dish.
7. Using a fork, dock the crust by poking holes into the bottom and sides.
Filling
2 Each Apples (one apple if large in size)
1 Tbsp. Butter
1 Tbsp. Flour
1 tsp. Maple Syrup
2 tsp. Lemon Juice
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1/4 tsp. Cloves
1/2 tsp. Salt
1 Tbsp. Cornstarch
Instructions:
1. Cut the apples into 1/4 inch slices, toss in sugar and allow to macerate in a bowl for 20 minutes, some liquid will be released
2. In a sauté pan, melt the butter then add the apple liquid, flour, maple syrup, lemon juice, cinnamon, nutmeg, cloves, and salt. Whisk together.
3. Add in the apples, cook on medium-low until until apples have softened slightly.
4. Place cornstarch in small bowl, pour some of the hot liquid from the sauté pan into the cornstarch while whisking. Add the cornstarch mixture back into the sauté pan and allow to cook and thicken for two minutes while stirring.
5. Pour entire contents of the sauté pan over the pie crust.
Oatmeal Crumb Topping
Butter
Oatmeal
Flour
Sugar
Baking Powder
Salt
Cinnamon
Instructions:
1. Combine dry ingredients in a bowl and whisk together.
2. Melt the butter and stir into the dry ingredients. Mixture should still be dry in nature and clumpy.
3. Top the pie with the oatmeal crumb and place into the oven.
4. Bake for 25 minutes at 350F
5. Enjoy your own personal apple pie a la mode or on it's own!
